Winery of the Košulič family

Winemaker Pavel Košulič

A five hundred-year old family tradition and a half-year old trade license – this is the starting point of the young winemaker, Pavel Košulič, from Hustopeče. Since he has literally grown up in wine cellar, he actually has more experience than some older winemakers. He has begun the wine enterprise, with his girl friend Veronika, with enormous enthusiasm and diligence. Besides developing the family tradition, Pavel and Veronika always help to introduce the younger people of Hustopeče to the folklore tradition.

Wines and vineyards

On a half hectare of their own vineyards and almost one hectare of family vineyards, the Košuličs grow more than thirteen grape varieties. Many of them are grown in different vineyards and such grapes are processed separately. The guests in their cellar can compare the differences between the wines, even though they grow only a few hundred meters apart. Sometimes this is because of the soil type, or the slope of the vineyard. When we include the different vintages, there are altogether tens of different wines to be found in the Košuličs’ cellar. Most of the wines are bottled and sold directly from the cellar. Pavel’s biggest success is his liquor wine “Stefan Kossulitz” – both red and white – which you can taste in the cellar. This wine has been named after his oldest ancestor, who came to Moravia from Croatia many centuries ago. This sweet alcoholic wine is produced in a similar way to the famous Port wines, and women in particular find it delicious.

Cellar

This three hundred and fifty year-old wine cellar, with its above-ground press house, is located in the lane of wine cellars called “Na Hradbách”, close to the centre of Hustopeče. The press house is nicely furnished, and guests wouldn’t guess that the wine is made right here in the autumns. There is an old mechanical wine press which is still used by the Košuličs. The wines mature in the cellar in traditional wooden barrels and it is possible to taste the wines directly here.

Usual programme

When the guests are hungry they start with a hot meal– they can ask for almost anything. Since they are in Hustopeče, they mostly want to taste the local speciality, Hustopečský flamendr. If they are only thirsty, they can start directly on the wine tasting. The wine tasting can be combined with a full description or just a short presentation on each wine. It is possible to taste everything that is in the cellar, including vintage and special wines. Along with the wines, plates with ham and cheese, home-made spreads and sausages and desserts are served.
